Reducing Effect of Chitosan Oligosaccharide on Postprandial Blood Glucose Level in Koreans

Abstract
We investigated the effects of chitosan oligosaccharide on the level of postprandial blood glucose in adult Koreans with
normal blood glucose level. Chitosan oligosaccharide used in this study was composed of monomer to tetramer (40.2%) and more than pentamer (59.8%). Postprandial blood glucose levels were tested for 2 hours at every 30 min interval after
carbohydrates-rich meal and the experimental group was pre-fed with 500 mg of chitosan oligosaccharide 20 min before the meal. Chitosan oligosaccharide significantly lowered the mean, maximum and minimum level of postprandial blood glucose at 30 min after meal. But chitosan oligosaccharide did not affect the variation range of blood glucose. Also, the level of postprandial blood glucose was reduced most rapidly between 30 and 60 min after meal and the reducing rate was much higher in male than in female. Therefore, these results suggested that chitosan oligosaccharide reduces the level of postprandial blood glucose by stimulated action of insulin.
